Any sugar cookie recipes without refrigerating dough?

I have to make sugar cookie in cooking class but I don’t have time to refrigerate and stuff. What recipes are there that don’t need refrigeration.

I want christmas sugar cookies, the one you roll out the dough and shape and put icing on cookies.
