what are some of your favorite christmas cookie recipes?

so far here’s my list:

pizelles (an italian anise cookie)
fudge
peanut butter bars
chocolate chunk cookies
almond bars
coffee flavored cookie

any other ideas? if you have the recipe that helps a lot too!! nothing too difficult. thanks!
